Fix redefinition of WINAPI_FAMILY_PARTITION when using MinGW64 (thanks to Henrik Pauli for pointing this).

tester: use snprintf instead of sprintf and use stdio instead of default logger function for bc_tester_utils

fix potential crash when a channel is disconnected from the server but still has pending data to write.
