Fix/strengthen xamarin packaging job

Merged Peio Rigaux requested to merge fix/strengthen_xamarin_packaging_job into master

Use SDK version from CMake instead of re-creating it with the git describe. Remove each possible archive before and after job to avoid conflicts.
